There are millions of ways to enjoy PB, but I can guarantee (for at least some of you) that you never thought of putting it on fries.
Yes, fries, the french kind, but not the potato kind. Gotcha there, eh?
Nope, those aren’t potatoes. They look super fine though, don’t they?
Those are parsnip fries. My new favourite way to enjoy peanut butter. Heck, it’s my new favourite way to consume food in general.
I found the recipe on Oh She Glows, one of my new favourite blog obsessions. She’s Canadian. What more can I say?
I altered the recipe just a little bit because I didn’t have any almond butter in the fridge.
4 T peanut butter
1 T EVOO
1/2 t fine grain sea salt
Preheat the oven to 400degrees. Peel and chop your parsnips into thick fry like shapes. In a bowl whisk together the butter, oil and salt. Toss the fries in the mixture until they are coated. Spread out the fries on a baking sheet (or 2) and pop those beauts in the oven for about 45 minutes. Depending on the thickness of your fries, and your oven, they might take 40 mins, or 50 mins, so make sure you’re watching closely for and burning.
Get overly excited, taste a fry, and realize that there was no such thing as over excitement when it comes to these fries.
They are that good.
Finger lickin’ good.
Better than regular fries good. Sweet, salty, crunchy, but not carby! The kind of fry you can eat without feeling guilty.
Man, I love root vegetables.
